Healthy Dairy-Free Sweet Potato Mac & Cheese (+ Free Printable!)

Who doesn't LOVE macaroni and cheese? As a kid, I loved having some macaroni and cheese, topped with a ton of pepper. It was such an easy meal to make, and it was quite honestly SO delicious that it seemed like a win-win. So when I wanted to start eating food that was healthier for me (plus, finding out I was lactose intolerant), I wondered if I would ever be able to enjoy this comfort food again.

Good news-- I CAN! And so can you, because this healthy version of mac and cheese is delicious, guilt-free and super easy-peasy to make.

The star of the show in this dish is the nutritional yeast. It has this nutty, cheesy flavor that is fantastic for cheese sauces, putting on popcorn, gravy-- basically anything that's savory. But more than that, this food is amazing. It's high in protein, fiber, minerals and B12 (which is VERY hard for vegetarians to get!). This food is underrated and everyone should try it. 

You'll need:

  • 1 bag of brown rice noodles
  • 1 TBSP fresh lemon juice
  • 1 cup (unsweetened, unflavored) almond milk
  • 1 cup of roasted sweet potato
  • 6 TBSP of nutritional yeast
  • 1 TBSP of cornstarch
  • 1 TBSP of dairy-free butter
  • 2 tsp of Dijon mustard
  • 1/2 tsp of garlic powder
  • 1/2 tsp of onion powder

Here's what you do:

  1. Roast your sweet potato. I often just pop mine in the microwave, after poking it with a fork. I cook it for 5 minutes on each side. You could also do this in the oven at 425 degrees F for about 20 minutes.
  2. Boil water. Add noodles.
  3. Heat the dairy-free butter on low heat in a pan.
  4. Stir in the almond milk and corn starch. Make sure there are no clumps!
  5. Mix in the nutritional yeast, onion powder, garlic powder, Dijon mustard, lemon juice and salt and pepper to taste.
  6. Remove the mixture from heat and add to a blender.
  7. When sweet potato is roasted, cut open the potato and add 1 cup of baked sweet potato to the blender. (Scrape the inside out of the skin!)
  8. Blend well!
  9. Pour your ooey-gooey yummy cheesy sauce over cooked noodles. Enjoy!

It may seem like a lot of steps and ingredients, but I promise you this is such an easy peasy dinner option, and it's one that won't leave you feeling lethargic, guilty or bloated!

I will warn you though that this recipe leaves a mess. The sauce gets really thick and leaves the blender gunked up. Also, if you leave the pan you mixed the sauce in out for too long, the sauce crusts up and can get really tough to get off.

You could let your blender soak overnight with warm water-- or use this new dish cloth I discovered! When cleaning my blender, this dish cloth was a game changer. I have never been able to fully get down in the nooks and crannies of my blender, but this dish cloth is fantastic because it has a powerful scrubbing side and gives me more control over getting the hard to reach places in the blender. I haven't been able to achieve the same level of control while scrubbing with a different kitchen tool. This is a much welcomed addition to my kitchen!

And while we're talking about a clean kitchen, does anyone hate cleaning their kitchen as much as I do? I would rather clean the bathroom than the kitchen any day!
